Cook Once, Eat Twice: Pulled Pork

My basic slow cooker pulled pork recipe is one of my faves…..not only is it delicious the day you make it (served with a crunchy cabbage salad and roasted sweet potatoes), but it easily fits into several other easy meals.  Make the pulled pork on the weekend (or even on a weekday since it takes maybe 5 minutes to prep), then enjoy the fruits of your minimal labor with these quick meals.

First up:  Pulled Pork Skillet Hash, a breakfast that could also be lunch or dinner.

Ingredients: (seves 4-5)
pulled pork (about 1 pound)
4 eggs
1/4 cup diced onion
2 handfuls baby spinach, chopped
1 tablespoon olive oil
1/4 tsp red pepper flakes (optional)
salt and pepper (to taste)

Directions:
1.  Warm olive oil in medium skillet over medium/high heat.
2.  Add onions and sauté until soft.
3.  Add pulled pork and sauté until warmed through.  Reduce heat to medium.
4.  Crack eggs in bowl and whisk until scrambled well, then add to pan.
5.  Combine well with pork and onions, then add chopped spinach.
6.  Cook until eggs are set and spinach is wilted.
7.  Salt and pepper to taste, and add 1/4 tsp red pepper flakes (if using).

 

Next up: BBQ Pulled Pork with Broccoli Slaw (or Sliders).

Ingredients: (serves 4)
pulled pork (about 1 pound)
1/4 cup diced onion
2 cups broccoli slaw
1/4 cup BBQ sauce (more or less to taste)
1 tablespoon plus 1 teaspoon olive oil (divided)
salt and pepper (taste)
slider buns (optional)

Directions:
1.  Warm 1 tablespoon olive oil in medium skillet over medium/high heat.
2.  Add onions and sauté until soft.
3.  Add broccoli slaw to pan and sauté until softened.  Push slaw to one side of the skillet, then add 1 teaspoon of olive oil to empty half of pan.
3.  Add pulled pork to empty side of skillet and sauté until warmed through, then mix in with broccoli slaw.
4.  Pour BBQ sauce into pan, mix well and cook, stirring occasionally, until hot.  Season with salt and pepper.
5.  Serve in bowls, or use to top slider buns.

Ingredients: (serves 4)
pulled pork (about 1 pound)
2 large handfuls greens, chopped (arugula, spinach, or kale)
marinated onions (to taste, at least 1/4 cup)
1 tablespoon olive oil

Directions:
1.  Warm olive oil in medium skillet over medium/high heat.
2.  Add pulled pork and sauté until warmed through.
3.  Add chopped greens and cook until wilted.
4.  Add marinated onions, along with a drizzle of marinade.  Continue to cook and stir until heated through.
5.  Serve in bowls, on slider buns, or in a lettuce wrap.
