Dinner Challenge: Fettuccine Alfredo and McDonald’s

So it’s two days into the menu plan my friends left on my refrigerator, and it hasn’t been too bad so far!  Here’s an update:

Monday:  Fettuccini Alfredo

I have to admit, fettuccini alfredo used to be on my list of favorite foods.  What’s not to love?  Cream, cheese and pasta…..yum!  Sadly, I learned a few years ago that the combination of grains and dairy are not friendly at all to my digestive system and I have almost nearly given them up, except for very special occasions, and then only small-ish servings.

Imagine my surprise when I found a dairy and grain free recipe for fettuccini alfredo……maybe this would be a great substitute!  Unfortunately, to make it dairy free means using coconut milk, something I am not fond of at all.  So I used heavy cream instead.

It was a decent alfredo sauce, however it needed some parmesan cheese for it to be truly yummy.  And the zucchini noodles were a good substitute for fettuccini, though they were a bit on the crunchy side.

My family liked the sauce, kids hated the zucchini noodles, husband actually liked their crunch.  They all ate it, but said they wouldn’t want me to make it again.

Oh, and the cream sauce was not very friendly to my digestive system, confirmation that my decision to avoid almost all dairy is a good one.

Here’s a side note……seriously, if you suffer from digestive issues at all (gas, bloating, bathroom issues), remove all dairy and grains from your life for 3-4 weeks, then try a small serving and see what happens.  You might find that you are sensitive to one or the other (or both, like me) and can avoid the digestive distress by choosing other foods.

Ok, enough of that side note.  On to tonight’s meal:

Tuesday:  McDonald’s

Tonight’s dinner was easy:  my husband grilled some burgers, I made some sweet potato fries and a salad.  Ok, the salad isn’t typical McDonald’s fare, but I needed more vegetables.  I made my burger with some romaine lettuce and dill pickles, topped with about 1/2 an avocado, while the rest of my family had buns, cheese and ketchup with theirs.

My husband, older girls and I thought it was much better than McDonald’s, but my younger two weren’t so sure.  It’s hard to compete with Ronald I guess.
