I spent today at the Texas State Fair and sadly, this is the closest thing to a vegetable that I ate all day. What you see in the picture is Deep Fried King Ranch Chicken Casserole, shaped like the great state of Texas. I realize that it’s backwards in the picture…..that is how it was served to me. I know, so disrespectful.
Ok, so the vegetable tucked inside that yummy goodness was some green peppers, I think. I tasted peppers and I saw bits of green so that’s what I’m going with.
So there’s my vegetable post for the day. If you live in the Dallas/Fort Worth area and can get to the fair, be sure to try the Deep Fried King Ranch Chicken Casserole…..it was my favorite of the fair this year. And feel good about yourself that you ate a vegetable while at the fair!
