Today is the beginning of a month-long Paleo Challenge at my gym. I’ll explain a bit more on that later, but first, here’s the menu for this week:
Monday: Steak Tacos (lettuce wraps for me)
Tuesday: Chicken Gruyère (roasted chicken for me….with a side of sautéed spinach)
Wednesday: Pot Roast
Thursday: Date night!
Friday: Chili
Saturday/Sunday: leftovers or a new recipe
I don’t normally make a separate dinner for myself, however, I’m being more strict this month with my eating, which means no grains, dairy, legumes, added sugar or alcohol. So I’ll be wrapping my steak in a crunchy lettuce leaf and omitting the cheese Monday night, and having a simple roasted chicken breast Tuesday night. That, my friends, will be a challenge. I love chicken Gruyère….say a prayer for me Tuesday night!
