I bought a new cookbook over the weekend (Dinnertime Survival Guide), and have marked up several recipes to try out. The Chicken with Honey-Beer Sauce on Monday was one of them. The recipe called for reducing the sauce, basically letting it simmer until it became thick and syrup-y. I was in a hurry and decided to skip the reduction……big mistake. The dish wasn’t ruined, but the sauce flavors didn’t blend well and didn’t really coat the chicken at all.
So, lesson learned. If a recipe calls for a reduction, take the extra 5 minutes or so……I sure will next time I make this recipe! (And I’ll share the recipe once I’ve made it successfully!!!!).
