Happy New Year!

If I had to guess, I’d say that most of you have made a goal to eat better this year.  To that end, here’s a simple, easy, whole-foods menu plan, perfect for starting off the new year.

Monday:  Southwest Meatloaf, Salad

Tuesday:  Chicken Curry with Rice

Wednesday:  Chili Verde, Cilantro-Lime Cauliflower Rice

Thursday:  Chicken with Artichokes and Tomatoes in Creamy Mustard Sauce (from this book), Steamed Broccoli

Friday:  Grilled Chicken and Sausage, Roasted Vegetables

Saturday:  Leftovers
