Weekly Menu: 4/20/2015

Monday:  Southwestern Shepherd’s Pie (recipe coming soon, based on one from this book), salad

Tuesday:  Slow-cooker Roast Chicken, mashed potatoes, steamed broccoli

Wednesday:  Pig in a Skillet (prepping Kalua Pig night before), sautéed greens (will skip the bacon), carrots

Thursday:  Carne Guisada (modified for slow-cooker), cilantro-lime cauliflower rice, roasted root vegetables

Friday:  Grilled Chicken and Sausage, shredded Brussels sprouts, salad
