Weekly Menu: 8/23/2016

It’s my favorite time of year:  Back to School!

No, I’m not dying for my kids to go back to school and leave my house empty and quiet each day, but I am really looking forward to more routine, structure, and yes, a little more quiet around the house.

If you’re anything like me,  you look at back to school as a kind of New Year, filled with anticipation, excitement, and resolutions.  But before you start making resolutions regarding your meal planning, let me say this:  KEEP IT SIMPLE.

The first week of school is not the time to make major changes to your dinner routine.  It’s just not.  You are likely to end up serving the tears of our forefathers by Wednesday.  Trust me, I know.  My oldest is staring 10th grade, so I’ve got plenty of experience with this.

Now, this doesn’t mean you should throw all those visions of home-cooked, well-balanced, perfectly planned meals out the window.  You just might want to dial it back a bit.  Plan a few easy slow-cooker meals, or prep a few things on Sunday so you have ingredients ready to grab from the fridge.

Or follow my plan below…..which makes liberal use of the slow-cooker and super-fast meals.

Monday:  BBQ Pork, Roasted Cabbage

Tuesday:  Tacos (ground beef), Salad

Wednesday:  Kalua Pig (will use to make a version of this)

Thursday:  Breakfast for dinner (eggs, bacon, maybe some sweet potato hash)

Friday:  OUT!!!!!
