Tuesday: Pazzagi and Meatballs (pazzagi is my 4-year-old’s new word for spaghetti…and in this case it’s spaghetti squash) and steamed brussels sprouts
Wednesday: Chicken Stir Fry with lots of veggies
Thursday: Ropa Vieja (new recipe….hoping it’s yummy!) served with cauli-rice
I’m going to grill enough chicken on Monday to have for lunches through-out the week, and I’ll make an extra batch of meatballs to either freeze for another time or for lunches. I hate making meatballs….mixing the meat icks me out, but I love meatballs (and so do my kiddos) so I use baggies for gloves and mix fast, trying not to think too much about it. If I’m going to make them, I’m going to make A LOT so I don’t have to do it again for a long time!
