Tuesday: Dirty Cauliflower Rice with Sausage (will make both regular rice and cauliflower rice)
Wednesday: Sheet-pan Balsamic Chicken and Vegetables
Thursday: Out for daughter’s birthday dinner
Friday: Bruswick-ish Stew (from this book)
- I’ll prep all the vegetables on Monday, chopping/dicing and storing in airtight containers in the fridge.
- For the dirty rice I’ll add some cooked, shredded chicken to the sausage mixture, but cook the cauliflower-rice in its own pan, and some white rice in another pan……my kids will have about a 50/50 mix of the caulk-rice and white rice. I’ve found this is a great way to get to eat the cauliflower rice without as much drama.
