Because I am participating in the Whole Life Challenge for the next eight weeks, all of my menus will be compliant with their Lifestyle nutrition level. Any ingredients in the recipes I link to that are not compliant with be omitted or substituted.
Monday: Zesty Chicken Bites, Salad
Tuesday: Taco Pie, Cilantro-lime Cauliflower Rice
Wednesday: Buffalo Chicken Casserole, Salad
Thursday: Leftovers (between kids’ practices and a school program this will have to be grab-and-go the few minutes we’re home between events)
Friday: Grill
Prep Work: (about 30 minutes, not counting cook time)
- Chop all veggies needed for the week’s menu
- Make frittata for breakfasts
- Make shredded chicken for lunches (for salads, chicken salad, etc)
