It’s nearing the end of summer vacation, and while I’m not quite ready for school to start, I am ready for a bit more of a routine. In July, the kids’ changing schedules and a road trip meant I was winging it most nights for dinner, which means we ate a lot of eggs or tacos.
So this week I sketched out a loose meal plan, easing my way back into regular planning:
Monday: Spaghetti with meat sauce (pasta and zucchini noodles…similar to this)
Tuesday: Chicken and Artichokes
Wednesday: Salad Bar
Thursday: Burgers and Sausage
Friday: Chili Verde
