Weekly Menu: 9/21/2015


Monday:  Chicken Enchiladas, Spanish Cauliflower Rice

Tuesday:  Sloppy Joes, Roasted Broccoli, Sautéed Corn (using frozen corn)

Wednesday:  Chicken Bites, Salad Bar

Thursday:  Grilled Flank Steak (using a version of this marinade), Roasted Veggies

Friday:  Leftovers

Prep for the week:

  1. Made a frittata for breakfasts (a version of this recipe)
  2. Made this soup for dinner on Sunday, planned extra for lunches
  3. Plenty of carrots for kids’ lunches and snacks
