Here’s the plan for this week!
Monday: Balsamic pork chops, roasted cauliflower and salad
Tuesday: Burgers with pico de gallo and guacamole, salad and watermelon
Wednesday: Braised chicken thighs with leeks
Thursday: Slow-cooker ribs and roasted cabbage
Friday: Leftovers (if there are any, if not, I’ll come up with something)
My breakfasts are the usual hardboiled eggs or scrambled eggs. Hoping to make sweet potato hash one day this week.
Lunches will be leftover southwest meatloaf from the weekend, chicken salad, and hopefully other leftovers from other dinners this week.
