I’m a day late with my menu plan….so sorry!
Since I actually hadn’t made a plan over the weekend like I usually do, I threw together a quick dinner last night with what I had on hand: grilled smoked sausage (this is a fave), roasted sweet potatoes, and sautéed spinach with bacon. Super easy, my kids all like it, and I had plenty of leftover veggies for my lunch today.
After dinner I started filling out my menu dry-erase board on my fridge, promptly got distracted, and returned later to find one on my kiddos had filled in the rest for me, as you can see in the picture above. Since I can’t really complain about any of the options (except maybe Sunday), we’re going to run with it.
Tuesday: Chicken Fajitas
Wednesday: Chicken Soup
Thursday: Tamales (bought from a local restaurant)
Friday: Enchiladas (this recipe for the filling)
Saturday: Chuy’s (a restaurant in town that this kid loves)
Sunday: Ice Cream Sundaes (a kid can dream, right?)
