I made it through Week 1 of my Whole30…yay! Here’s to a good Week 2…..lots more energy and trying out a few new recipes.
Monday: Out (My daughter’s birthday dinner….she’s chosen Olive Garden, a completely paleo restaurant, right? I’ve checked the menu and there are several options besides the pasta and breadsticks, so I should be good to go, as long as the bread basket stays at the other end of the table)
Tuesday: a version of this meatball recipe, tomato sauce, spaghetti squash, and steamed broccoli
Wednesday: Sunday Beef Stew, mashed cauliflower
Thursday: Roast Chicken and Gravy, roasted root vegetables
Friday: Leftovers
Weekend: More leftovers and/or breakfast for dinner
Again, any non-Whole30 ingredients will be omitted or I’ll make an appropriate substitution.
