If you read my menu posts very often, you’ll see that I use my slow-cooker often, at least once a week, and sometimes more. Though we try to eat dinner together as a family most nights of the week, we do have one night of kids’ activities that makes it impossible for all of us to eat at the same time, and another night that I’m not usually home between 4:30pm-5:30pm, which means I have to plan my cooking carefully…..which means the slow cooker.
You don’t need a fancy model with lots of bells and whistles, though I do recommend you find one with a “keep warm” function, meaning, after the preset cooking time is finished, it switches to a “keep warm” setting. This means your meal can be ready to eat at say, 5pm for the first shift, then kept warm throughout the next few hours for any stragglers.
Ok, all that said, here is a list of my favorite recipes in the slow-cooker. Some of these (most of the soups) don’t specifically call for the slow cooker, however, I usually follow any necessary stove-top directions then add everything to the slow cooker to simmer on low as long as necessary.
