Weekly Menu: 3/16/2015

We are headed back to school after a great Spring Break.  The weather cooperated with us and we had a few really pretty days and we all enjoyed our week off from the usual routine.  While I’m not quite ready for the heat of summer, I am hoping we’ve seen the last of the snow and cold for awhile.

I’m also hoping to get back into the swing of things with menu planning.  To that end, here’s this week’s plan:

Monday:  Spaghetti (pasta and squash), Meatballs and Tomato Sauce, shredded Brussels sprouts

Tuesday:  Chicken Enchilada Casserole (new recipe, hoping it’s yummy), cauliflower rice, salad

Wednesday:  Grilled Flank Steak, salad, steamed broccoli

Thursday:  Roast chicken, mashed potatoes, roasted cabbage

Friday:  Leftovers
