Weekly Menu: 8/4/14

This week is going to be Crazy Town for our family so I’m getting as much as I can pre-planned, chopped and/or cooked today before the whirlwind hits.  Fingers crossed for a fun and crazy week!

Monday:  Balsamic Chicken and Sausage, roasted cauliflower

Tuesday:  Spinach and Artichoke Burgers, roasted potatoes, salad (make extra burgers for lunches)

Wednesday:  Chili Verde, salad

Thursday:  Curry Chicken, cauliflower rice, steamed broccoli

Friday:  Leftovers

Saturday:  Out

Sunday:  Out

I’ll be making a frittata to have on-hand for breakfast, and am planning on leftovers from Tuesday and Wednesday’s dinners for lunches the rest of the week.  I’m also planning to chop up a 5-lb bag of carrots for snacks…..lately my kids have been eating them like crazy and I can’t keep up with them…..yay for carrots!!!!
