Weekly Menu: 1/26/2015

I’m running a little late with my menu planning, but after a quick trip to the grocery store I’m set for the week.

Here’s the plan:

Monday:  Sautéed Shrimp, zoodles (similar to these), steamed broccoli

Tuesday:  Meatloaf muffins (will post recipe soon), roasted butternut squash and brussels sprouts

Wednesday:  Chicken Fajitas, salad

Thursday:  Asian Beef with Cauliflower fried-rice, steamed broccoli

Friday:  Leftovers

Saturday:  Out

Sunday:  ????

A few notes:

Whenever you see steamed broccoli on the menu, it’s paired with either a new recipe, or with a recipe that one or more of my kids don’t usually care for.  They will all eat steamed broccoli, so it’s nice to have something familiar and not-too-terrible on their plates.

I will not be adding the dried cranberries to the squash and sprouts recipe on Tuesday, because honesty, I hate dried fruit.  Yep, I said it…I hate it.  And since I’m the cook I don’t have to include it.

Thursday’s recipe has an added sweetener that I will be omitting, which I don’t think will be noticed (during the Whole Life Challenge I’m avoiding all added sweeteners, natural and artificial).

Pretty sure I’ll have one of the kids plan and cook dinner on Sunday night, just not sure which kid that will be yet.  But there’s a pretty good chance whoever I pick will want to make this.

I’m also planning to make this chicken and prep some veggies (sweet potatoes, roasted cabbage, maybe some greens) to have for lunches.
