Life in our new house is finally starting to feel more normal: new carpet, new paint, beds have been put together, and most of the boxes have been unpacked. Phase One of our project list is just about finished (paint and carpet in kids’ bedrooms and living areas), then we’ll rest and regroup before we tackle Phase Two, which is the kitchen. Not going to lie, I look forward to Phase Two with equal parts excitement and anxiety. Most people have a horror story or two about their kitchen remodel, so I’m managing my expectations and keeping an open mind as we start drawing up plans and getting estimates from contractors.
In the meantime, the cooking show must go on.
Monday: Meatloaf, mashed potatoes, Swiss chard
Tuesday: Chicken Stir Fry with carrots, broccoli and sugar snap peas
Wednesday: Balsamic Pork Chops, roasted cauliflower, salad
Thursday: Darn Good Chili, salad
We have plans with family for Easter weekend, which involves potlucks, brunch and wine…..my favorite kind of weekend!
