Here’s the plan for this week:
Monday: Steak Bites, steamed broccoli, salad
Tuesday: Pork Ragu, butternut squash, salad
Wednesday: Sautéed chicken (like this, but with chicken and white wine in stead of pork and balsamic) sautéed spinach (tossed in with the chicken), roasted carrots
Thursday: Taco Salad
Friday: Meatballs (new recipe coming soon), roasted cauliflower, salad
Remember when I mentioned the coming cold and flu season in last week’s menu post? Seems like it was a bit of foreshadowing: I got hit with a cold last week. The worst lasted only a day or so, but it’s lingering and I would really like it to go away (and stay away from the rest of my family!!!), so we are trying even harder to eat well and sleep well around here. The kids will not be happy with their daily serving of salad, but leafy greens are exactly what we need. Wish me luck…..
