Monday: Chicken Curry with Sweet Potatoes and Cauliflower
Tuesday: Steak Tacos and Salad
Wednesday: Roasted Sausage and Brussels Sprouts, Steamed Broccoli
Thursday: Sautéed Chicken (like this, but white wine instead of balsamic), Mashed Potatoes, Roasted Green Beans (same method as this)
Extra: Sweet Potato Hash for breakfasts and Veggie Mix for Egg Bowls (check my instagram for recipes)
Weekend Prep:
Onion: chop 1-2
Sweet Potato: peel and grate (using food processor) for Monday’s dinner and for sweet potato hash
Cauliflower: chop into florets for Monday’s dinner
Romaine: chop for Tuesday’s dinner and lunch salads
Brussels sprouts: trim and chop for Wednesday’s dinner
Hash and Veggie Mix: will make these when I prep the veggies for the week
