Weekly Menu: 6/8/2015


I have to admit, my menu planning fell apart during the last month or so of school.  For all intents and purposes, I was done with the school routine.  My poor family and I limped through the last few weeks of school eating mostly eggs or tacos, or egg tacos, for dinner.

But the crazy end-of-the-school-year gauntlet is over and it’s time to settle into our summer routine.  Here’s to a relaxing summer!!!!

Monday:  Pork Ragu, zucchini noodles (similar to this), sautéed chard 

Tuesday:  Grilled chicken, roasted cauliflower, steamed broccoli

Wednesday:  Southwest Shepherd’s Pie, grilled corn on the cob

Thursday:  Grilled Flank Steak, salad, carrots

Friday:  Leftovers
