Weekly Menu: 5/2/2015


May?!?!  How on earth is it May already?  We are headed into the home stretch of school, just a few more weeks until our mornings will be slow and easy……a change of pace that will be most welcome at my house.

Until then, though, our evenings are crazy-town.  So here’s to menu-planning saving me some time, money, and hopefully my sanity over the next month or so.

Monday:  Kalua Pig, garlicky cabbage, salad

Tuesday:  Braised Short-Ribs, roasted cauliflower, sautéed chard (we have SO MUCH chard in the garden right now….yay!)

Wednesday:  Bacon-wrapped Chicken, steamed broccoli, salad

Thursday:  Steak Tacos, fresh pico de gallo, salad

Friday:  Leftovers
